The location of catering facilities and liquor stores in St Petersburg

Abstract

С развитием современного общества и переходом к рыночной экономике значительно меняется географическое пространство. Начинаются преобразования в различных сферах общественной жизни, в том числе в отраслях розничной торговли и общественного питания. Территориальная организация городской структуры упомянутых отраслей модифицируется и начинает подчиняться основным требованиям современной рыночной экономики. В эпоху интенсивного развития геоинформационных технологий географические факторы оказывают значительное влияние на принципы территориального распределения объектов торговли. В работе был проведен обзор рынков общественного питания и розничной торговли Санкт-Петербурга на примере наиболее интенсивно развивающихся отраслей: пекарен, кофеен, питейных заведений и магазинов специализированной алкогольной розницы. Была рассмотрена география и особенности режимов работы крупнейших сетей каждой отрасли, а также факторы соседства и кластеризация объектов исследуемых отраслей торговли и общественного питания между собой. В рамках исследования также был проведен анализ факторов размещения объектов розничной торговли и общественного питания по территории Санкт-Петербурга, этапы трансформации функциональной структуры городского пространства на основе работ отечественных ученых в области экономических наук и маркетинговых исследований. Данная исследовательская работа может послужить фундаментом для обоснования наилучшего местоположения торговых точек и прогноза развития рассмотренных рынков.

With the development of modern society and the transition to a market economy, the geographical space is changing significantly. Transformations are beginning in different areas of public life, including in the retail and catering industries. In urban areas, the geographic placement and organization of previously mentioned industries are beginning to follow the basic requirements of the modern market economy. In the era of rapid development of geoinformation technologies, geographical factors have a more significant impact on the location of retail and commerce. In the study, a review of the catering and retail markets of St. Petersburg featured the most rapidly developing industries: bakeries, coffee houses, drinking establishments, and specialized alcohol retail stores. The geography and hours of operation of the largest networks of each industry were considered, as well as the proximity and clustering of different retail and catering industries when compared to each other. As part of the study, an analysis was also done on the factors of placement of retail and public service businesses in St. Petersburg and the stages of transformation of the functional structure of urban areas based on the work of prominent scientists in the field of economic sciences and marketing. This research work can serve as a foundation for substantiating the best location of retail outlets and forecasting the development of the considered markets.
