Improvement of the procurement process of the X restaurant chain

Работа выполнена в формате консультационного проекта для петербургской ресторанной группы Х в целях совершенствования закупочного процесса и отбора поставщиков товарной группы А. В рамках работы рассмотрены основные теоретические аспекты, в том числе специфика организации закупок как организационного процесса, формы организации торгов и методы отбора поставщиков. Результатами работы стали выявление текущих проблемных этапов процесса закупок, формализация операционного процесса и рекомендации по усовершенствованию операций, а именно внедрение комбинированной процедуры торгов путем разработки собственной ЭТП, введение контрольного показателя на этапе поиска новых поставщиков и изменение формы заявок, разработка стандартизированного каталога приемки овощей и фруктов.The work was carried out in the format of a consulting project for the Petersburg restaurant group X in order to improve the procurement process and the selection of suppliers of product group A. The main theoretical aspects were considered, including the specifics of the organization of procurement as an organizational process, the forms of organization of tenders and methods for selecting suppliers. The results of the work were the identification of the current problematic stages of the procurement process, the formalization of the operational process and recommendations for improving operations, namely the introduction of a combined bidding process by developing its own electronic trading platform, introducing a benchmark at the stage of searching for new suppliers and changing the application form, developing a standardized catalog of fruits and vegetables acceptance.
